I play thrash, blues and jazz and was wondering if this could do all three?

Would the stray cat, JCM 800 or the plexi50 lead be best for metal?

id say the jcm 800 clone with a good tubescreamer or tube screamer clone. Randy rhoads used an mxr distortion+ in fron of a jmp superlead which is very similar to a jcm800 with less gain on the jmp. Id say the jcm 800 50 watter is what your looking for.
