Well, we all know that, aren’t we? 
But to prove it once more, here is a little test with 1x12 and 2x12 speaker cabinets.
Both have Celestion Century speakers in. Both are closed back, front ported with similar microphone capsules inside at the same position in front of the speaker.

1x12      W – 53cm,  H – 40cm, D – 28cm.
2x12      W – 55cm,  H – 65cm, D – 30cm

amp – My OTS straight to the A-B switch box and to the speakers.
Guitar - Strat with Dimarzio virtual heavy blues noiseless N & M pickups and bridge humbucker. Shark guitar cable.
Recording – Pro tools, no EQ, no effects.
Track arrangement: 1x12 clean chord followed by 2x12 clean chord. 1x12 clean scale by 2x12. Then clean boost, neck overdrive, bridge humbucker overdrive and finaly bridge single coil overdrive.

I hear the difference. The 2x12 is more boomy, which is probably fine for live playing.

I would defenitely cut that extra low out (with a 100Hz-150Hz high pass), when mixing that 2x12 guitar sound into a track with bass and drums.

So FWIW the 1x12 makes more sence in a studio setup, IMO.

It’s interesting question! Same speakers, mic placement, amp and recording settings are similar. Probably two speakers interact, especially high frequencies and they cancel each other on some extent where the mic is.
Or more stronger lower frequencies are dumping higher ones.
In my cabs the baffle is recessed on 7 cm from the front grill which contributes to more intense frequency interaction. They are great for live situation but for recording most accurate cab can be frontloaded 1x12 EV or Fane AXA bass reflex closed back cabinets.
I’ll try it soon and post the results.

Unfortunately Celestion discontinued production of Century and it’s almost impossible to get 8 ohm version. Some internet shops still have 16 ohm ones which probably is better for OTS because of 16 ohm out. Also tone would be mellower and fuller, less loud though.
