Its not that difficult. You just need a hot air gun (paint stripper type, ideally with a temp control) and a few sharp scalpel blades. I use PVA glue which is much more forgiving than contact adhesive. The OTS head is quite straight forward, the most difficult but is the front top edge with the cut out, but if you make a head shell with a very shallow cut out its much easier.

Nest time I do one (I'll be doing a 2x12 cab in a couple of months or so) I'll try and organise someone to take some photos while I'm doing it, unfortunately I couldn't take them myself since your hands get covered in glue!.

Here's my entry.  Just finished the cabs last night.  Ported speaker cab, based off the TL806 plan, houses an EV12L.  Suede all around.  Probably would have been cheaper, factoring in my time,  to just buy the cabs and cover them to my tastes but, there is a great sense of satisfaction having done my own work.  Oh yeah, very nice amp.  I still have some minor tweaking to do but, I'm definitely in the ballpark.
